Long Bean Salad.
•Long Green Beans 10
•Cherry Tomatoes 9
•Toasted Peanuts Handful
•Thai Chilies 8

Lets Get Started
Place the garlic and the chilies in the clay mortar and start bashing until a lumpy paste .Now add one table spoon of palm sugar and bash until all is combined together. Break the beans into 1 inch lengths add and bash until broken and flat .Now add the tomatoes squeeze down with the pestle to release all their juice .Cut the lime into 4 pieces and squeeze in the juice and finish off with 1 table spoon of fish sauce and the last of the nuts .Mix it up well with a spoon and serve with sticky rice and BBQ chicken or fried squid .
Red Curry Paste
- 8 dry chili’s
- 20 thai chili’s
- 5 cloves garlic
- 1 tablespoon fresh coriander roots
- 2 x 3”inch pieces lemon grass
- sliced lemongrass
- 10 x shallots
- 1 3”inch piece galangal can swap for ginger
- 4 kaffir lime
- 1/2 table spoon shrimp paste
- 2”inch turmeric

This is really simple .Add all the ingredient accept the shrimp paste to the mortal and them bash until a smooth pulp.Then mix in the shrimp paste with a spoon till all is incorporated .
